Species: Saccharomyces cerevisiae
Profile: Our Scottish ale strain is ideally suited for the strong, malty ales of Scotland. This strain is very versatile, and is often used as a “House” strain as it ferments neutral and clean. Higher fermentation temperatures will result in an increased ester profile.
Scottish-ale options; Nottingham is a practical dry-yeast alternative with a different ester profile. Compare attenuation, fermentation temperature, alcohol tolerance and the package pitching guidance before switching; these are recipe alternatives, not a claim that the cultures are identical.
